The origin of Carrot Cake Passion cake is often referred to as disputed, but probably derived from Gothenburg, Sweden. Popularity of carrot cake was likely revived in Britain because of rationing during World War II.
Carrots have been used in sweet cakes since the medieval period, at which time sweeteners were rare and expensive, while carrots, which contain more sugar than other vegetables except sugar beet, is much more easily obtained and used to make sweet desserts.
